Mesquite Honey is a lightly floral and pleasantly mild honey produced in the Desert Southwest of the US and Northern Mexico. To produce this premium honey, bees source nectar from the Honey Mesquite (Prosopis glandulosa) as well as the lesser known Screwbean Mesquite (Prosopis pubescens). While there are plenty of mesquite trees in Central Texas, mesquite honey crops will never be reliable in this area. Mesquite needs drought conditions to produce sufficient nectar for bees to put up surplus stores.

Mesquite Honey
The honey is just amazing! I use it on my chicken and salmon to help flavor it. It has a very soft flavor and pairs quite nicely with other foods.

Another good one
I’ve had other mesquite honeys from across the state. Most were darker. This one was light and very good. I will probably order this one again

Walker Honey Farms Mesquite Honey.
This is one of the "HOLY GRAILS" of Honey, a very light colored and very delicate flavored honey. I use this honey when drinking Chinese Pu ERh tea as the tea is delicate in flavor when brewed using rough cut leaves. The Honey and the tea are not overpowering and literature says the PuErh tea is beneficial as a healing tea.
