Honey Chocolate Chip Cupcakes

This has been one of our favorite recipes thus far! This recipe can easily become your starter batter for cakes, cupcakes, and muffins. It is super easy. Make sure you leave your comments down below to tell us what you think! 


What you need:

Cupcake (or batter ingredients):

  • 1/2 cup - butter or margarine, softened
  • 2/3 cup - Walker's Alfalfa Honey
  • 1 - egg 
  • 1/2 teaspoon - vanilla extract 
  • 1 1/4 cups - all-purpose flour 
  • 1/2 teaspoon - baking soda 
  • 1/2 teaspoon - salt 

Topping:

  • 1/3 cup - Walker's Alfalfa Honey
  • 1 - egg
  • 1/2 teaspoon - vanilla extract
  • 1/8 teaspoon - salt
  • 1 cup - semi-sweet chocolate chips 
  • 1/2 cup - chopped walnuts

  • Using electric mixer, beat butter until light; gradually add Walker's Alfalfa Honey, beating until light and creamy. 
  • Beat in egg and vanilla
  • In a medium bowl, combine flour, baking soda and salt; gradually add to butter mixture, mixing until blended.
  • Then spoon batter into 16 paper-lined or greased 2 1/2 inches muffin cups. 

  • Bake at 350F for 10minutes; meanwhile prepare toppings. 
  • Using electric mixer, beat honey, egg, vanilla, and salt until light; stir in chocolate chips and nuts.

  • Remove cupcakes from oven. 
  • Spoon 1 Tablespoon topping over each partially baked cupcakes. 
  • Return to the oven; bake at 350F for an additional 12 to 15 minutes or until topping is set. 
  • Cool in pan on wire rack 

There are many variations to this recipe. Use directions 1-4 to make the basic batter-- try adding blueberries for a delicious morning blueberry muffin. Not a walnut or chocolate fan? Try using pecans or butterscotch chips instead for a completely different cupcake. Either way, this recipe is a sure crowd pleaser!
