When the Spaniards arrived in Texas they found the residents here making a coffee-like drink from the caffeine-rich dried leaves of the Yaupon Holly trees that fill the understory in the Post-Oak Savannah region. The Spaniards also brought honey bees and soon discovered another wonderful by-product of these beautiful evergreen red-berry bestudded shrubs. Don't tell anyone, but Yaupon Holly Honey may be the best woodland honey produced from Texas to Georgia. Other spring woodland honeys are darker and more bitter than true Yaupon Honey harvested as soon as the nectar stops flowing in mid-April each Spring. We waste no time in "stealing" this golden "caffeine-free" gift from the bees. You will taste the difference!
