Sweet clover is abundant in the Dakotas but a rarety in Texas. We are fortunate to have a few isolated opportunities to make a high quality low-elvation clover honey right here in our backyard. We move as many hives as we can spare to the clover fields around Central Texas for the peak bloom season in May and June. When the clover dries up we rush in to take the honey from the hives before it is mixed with other honeys. Using this time-tested method, we are able to present our smooth and sweet clover honey to you with as little interference between the flower, the bee, and you as is possible. We think you will appreciate--and taste!--the difference our extra effort makes. Superb on pancakes, waffles, and over cut fruit.
