Chipotle, Honey & Lime Grilled Chicken Kabobs

Introducing our first (of many) honey recipes: Chipotle, Honey & Lime Grilled Chicken Kabobs

Here is what you are going to need: 

  •  2  1/2lbs boneless skinless chicken breasts, about 6 (cubed)
  • 1 chipotle chile in adobo, minched (this will add sweetness and some spice, add as much as you would like depending on your taste) 
  • 1/2 teaspoon -- adobo sauce, from the canned peppers
  • 1/4 cup -- lime juice (also try using some zest from the lime)
  • 1 garlic cloves, minced 
  • 1/4 cup extra virgin olive oil (available in our retail store) 
  • 3 tablespoons -- Walker Honey Farm's Orange Blossom Honey
  • A pinch of sea salt and fresh black peppers
  • (optional) Cilantro, chopped (a finishing touch Alyssa added -- it was wonderful) 

Directions:

1. Soak wooden skewers in water for at least one hour before adding the chicken to the skewers. 

2. Whisk together olive oil, lime juice, lime zest, Walker Honey Farm's Orange Blossom Honey, garlic, salt and pepper until well blended to make a marinade. (smells delicious ALREADY!)

3. Put chicken and marinade into a large resealable plastic bag and refrigerate, turning the bag occasionally, for 3 hours, or overnight (the longer it marinades the better!) 

4. Skewer chicken on skewers. (helpful tip: wrap the end of each wooden skewer with a bit of aluminum foil so they won't burn. 

5. Preheat grill to 375 degrees (a medium hot fire)

6. Grill Chicken until just cooked through and slightly charred, turn often, about 8-10mins


7. Remove from heat and serve with fresh lime! (squeeze as much as you would like over the chicken) 

8. (option ending) Serve over cooked rice with a sprinkle of cilantro and honey (SOO YUMMY!)
